MEET OUR CULINARY LEADERS

Executive Chef Justin Harry

Executive Chef Justin Harry was raised in the United States and Europe; he often travelled to Naples, Italy with his family where he learned to cook. With no formal culinary education, Chef Justin Harry always relied on his intuition and innate pleasure for cooking. Chef Harry was previously the Executive Sous Chef at La Torretta Lake Resort and Spa in Montgomery, Texas, and the Executive Chef at The Canyons Resort in Park City, Utah. Known for his fusion cuisine, Chef Harry creates eclectic local and regional favorites by blending ingredients and flavors from Worldly cultures.

Chef Thomas G. Mandzik

Thomas Mandzik considered a career as a chef after working in restaurant industry for eight years. Chef Mandzik has attended the Culinary School at The Art Institute in St. Petersburg, Florida. Prior to joining TradeWinds, Chef Thomas interned with one of Tampa’s top chefs, Chris Ponte. After completing culinary school, Chef Mandzik completed his apprentice in Chef Jean Phillip Polo’s kitchen, and was promoted as the Executive Sous Chef position at the Treasure Island Yacht and Tennis Club. Chef Thomas has served as the Banquet Sous Chef under Chef Matt Tracy at the St. Petersburg Yacht Club. Currently he is overseeing all culinary operations for Bermudas Steak and Seafood Restaurant, Beef ‘O’ Brady’s, Salty’s Bar and Room Service.

Chef Jon Hilton, Chef de Cuisine Palm Court Italian Grill

Chef Jon Hilton grew up in a family of home cooks where he learned the fundamentals of Southern cuisine. Culinary trained, Chef Hilton began working at Amelia Island Plantation Resort alongside the Master Chef where he became a Tournant Chef of all the food outlets. He also served as the Chef de Cuisine at The Florida Yacht Club in Jacksonville. Since joining the culinary team at the TradeWinds Islands Resorts in March of 2013, Chef Jon has moved up the ranks to establish himself as the Chef de Cuisine at Palm Court Italian Grill, TradeWinds Island Resort’s signature restaurant and TripAdvisor’s No. 1 rated St. Pete Beach restaurant.

Chef Aaron Schweitzer, RumFish Grill

Originally a Dayton, Ohio native, Chef Aaron Schweitzer started his culinary training long before he attended the Pennsylvania Culinary Institute. He has assisted in the opening of various concept restaurants, such as; Boca Bay, Prima, Osteria Cicchetti, The Grand Union Pub, The Kitchen and Osteria Cicchetti II. Chef Aaron served as the Chef de Partie at a private country club for four years before moving into a new direction as the Chef for Circa 1922. He was appointed as the Chef de Cuisine of RumFish Grill at Guy Harvey Outpost in April 2014.
